Instructions

  1. To cook the bacon: heat skillet over medium high heat. Lay bacon in pan in single layer without touching each other. Let cook 2 minutes a side. After that go at 30 second intervals per side until doneness is achieved.
  2. Remove bacon from pan and put on kitchen towels or napkins and lightly pat to absorb excess grease.
  3. Keep 1 tablespoon of bacon grease/lard in pan, reduce heat to medium-low. Break eggs into small bowl. This is done so quality of egg can be checked. When grease sizzles in pan, carefully add egg. Add Salt and Pepper to taste.
    • For sunny side up egg: Cook eggs for 4 minutes until white is firm and opaque.
    • For over-easy egg: Cook eggs 3 minutes, gently flip with spatula cook 2 minutes more.
    • For over-medium egg: Cook eggs 3 minutes, gently flip with spatula cook 2 minutes and 15 seconds more.
    • For over-hard egg: Cook eggs 3 minutes, gently flip with spatula cook 2 minutes and 30 seconds more.
