Ingredients: 1/3 cup water • 1 cup sugar • 1/2 teaspoon cream of tartar • 1/4 teaspoon peppermint extract • A few drops of food coloring, black is traditional but it's cook's choice.

1. Spray an 8-inch pan with cooking spray and set aside.

2. In medium sauce pan, combine water, sugar, and cream of tartar over medium-high heat, stirring constantly, until the sugar is dissolved and the mixture begins to boil. If sugar crystals from on the sides of the pan, wash down the sides with a pastry brush dipped in hot water.

3. Clip a candy thermometer to the side of the pot. Reduce heat to medium and continue cooking, stirring occasionally, until the temperature reaches 260 degrees Fahrenheit. Remove the pan from the heat. Add the peppermint extract and food coloring and mix well. Be careful when adding the flavoring, steam burns.

4. Pour the syrup into the prepared pan. Let the syrup cool for a few minutes. Put on a pair of clean heavy rubber gloves and spray them with cooking spray. Rub hands together to distribute the oil. If you can tolerate the hear, you can skip the gloves and just oil your hands.

5. Pick up the hot candy and being to pull and twist into a rope. This will be hard at first, as the candy will just want to be a mushy glob. Gradually it will stiffen and be easier to pull. Fold the rope in half and then half again and repeat with the twisting and pulling. Continue to twist, pull and fold. AS you pull and twist the candy will begin to become opaque and shiny. When the candy is to stiff to pull, snip the rope into 3/4 inch pieces and wrap in parchment paper or plastic wrap. Do not let them touch. Store in airtight container. The humbugs will begin to recrystallize after two or three days.
